Simple Raw Chocolate Cake
This is the easiest raw cake ever! This recipe would be a perfect introduction to raw cooking, to experience how simple and rewarding it can be!
Ingredients for base
- 1 cup walnuts
- 1 cup dates
Ingredients for filling
- 1 cup soaked cashews (overnight)
- 1/2 cup melted coconut oil
- 2 heaped Tbsp. raw cacao powder
- 1/4 cup water
- 1 tablespoon of honey
Instructions for base
Step 1: Process walnuts to a fine consistency.
Step 2: Add dates and process to a doughy texture. Not too much or it becomes oily.
Ste 3: Press down into a lined cake tin, refrigerate.
Instructions for filling
Step 1: Process cashews, oil, cacao, sweetener (to taste) and add water slowly until it’s a smooth cream.
Step 2: Pour over base.
Step 3: Refrigerate for minimum of three hours.
Tip: adding some melted cacao butter to the filling will make it firmer. For that restaurant finish get creative with presentation, dusting with some powdered cacao, adding little slices of fruit to the plate.
