Muslie Bar Slice: Build Your Own

I love this recipe! It is so easy, and can be modified to suit your tastes or dietary requirements.

I love to make muslie bars for our lunches. They are a great snack to have at uni, quick to make and very yummy. I have created a ‘base’ recipe that can be modified to include whatever you have on hand, in your pantry.

You’ll see that I include the quantity of ‘nuts’ or ‘dried fruit’ but what you put in, is entirely up to you. There are endless combinations- and you can make them different every time!

INGREDIENTS

125 grams butter OR coconut oil

1/2 cup golden syrup OR honey (or mix of the two)

1 cup rolled oats OR quinoa

1 cup dried fruit

½ cup seeds

½ cup nuts

½ cup gluten free self raising flour

This is one combination I used, and it was amazing: dates, apricots, pistachios, pepitas.

METHOD            

Step 1: Preheat oven to 180°C (350°F).

Step 2: Place the butter/coconut oil and golden syrup in a small saucepan over low heat and cook, stirring until the butter/oil is melted.

Step 3: Place the oats, fruit, seeds, nuts, flour in a large bowl and mix to combine.

Step 4: Add the butter mixture and mix to combine.

Step 5: Press into the base of a 20cm x 30cm tin lined with baking paper.  Bake for 20 minutes or until golden.  Cool completely in the tin before cutting into slices to serve.
